Corned Beef & Cabbage in the Crock Pot

Prep Time: 5 min.    Total Time: High 4-5 hrs/Low 8-10 hrs    Serves: 4

Ingredients

Corned beef round

1/2 head cabbage cut in wedges
1 quart apple juice
1 c. brown sugar
1 Tbsp. prepared mustard
8 sm. red potatoes
2 med. carrots cut in chunks
1 onion cut into eighths

Preparation

In crockpot, combine apple juice, brown sugar and mustard. Cook on low 8-10 hours or high 4-5 hours. Place meat in crockpot (trim off excess fat). Add onions, cabbage, potatoes, and carrots.

*I found you can also add more of the potatoes, carrots and cabbage the last 3 hours after the meat has cooked down and there is more room in the pot. This keeps the veggies a bit firmer as well.
