Ingredients
Fresh cilantro to taste. (I use a bunch)
1/2 package of Burrito seasoning mix.
Pepper to taste (about 1/2 teaspoon)
2 cloves garlic, smashed or use the bottled kind.
2 cans Pinto beans (about 32 oz total)
1 cups water
2 cans chicken broth
1 can Rotello diced tomatoes (I use the mild one)
2 cups corn
2 small cans of diced green chilies
Left over chicken breast diced.

Preparation
Combine everything in the crockpot and set on low all day.
Option 2: On the stove, combine everything except the chicken, bring to a boil and cook for 20 minutes. Turn to low, add chicken and cook for about an hour.
If you are not on a diet, serve with shreaded cheese, avocado slices, sour cream or tortilla chips.
