Ingredients
2c balsamic
6 baby portabellas (clean & stem)
1 tbsp olive oil
1 tsp salt & pepper
6 slices fresh mozzarella
1 roma tomato sliced
6 basil leaves
1/4 c pine nuts

Preparation
Pour vinegar in pan & cook on high until reduced by half (set aside).
Heat grill.
Brush mushrooms with olive oil & sprinkle with S&P.
Grill 2-3 min on each side.
Remove from grill & top with mozzarella & slice of tomato & basil leaf.
Sprinkle with pine nuts & drizzle with balsamic glaze.
*An even simpler version is to BBQ the large portabella and top with havarti cheese.
