Summer Roasted Peaches

Prep Time: 20 minutes    Total Time: 1 hour    Serves: 8

Ingredients

4 firm but ripe large peaches, rinsed, halved, pitted
6 almond biscotti
4 tablespoons whole raw almonds
3 tablespoons unbleached all purpose flour
2 tablespoons sugar
4 tablespoons chilled unsalted butter
Vanilla ice cream

Preparation

Preheat oven to 350 degrees. Butter 11x7x2 inch glass baking dish. Combine biscotti, almonds, flour, sugar in food processor. Pulse butter into the mixture until moist clumps form. Put peach halves, cut side up, into prepared dish. Spoon topping into halves and press down lightly to adhere. Bake peaches until tender when pierced with a knife and topping is golden brown, about 35 minutes. Cool slightly and serve with vanilla ice cream.
